Punjabi Wadi Pulao is a rice dish that is well flavoured and prepared just like any pulao or biryani but with addition of spicy dal wadi. It is also very healthy and nutritious.
Amritsari Wadi Pulao Recipe:
Ingredients:
Long grain Basmati Rice - 2 Cups
Urad Dal Wadi - 3 to 4 (Slightly crushed)
Oil - 2 tbsp
Ghee - 1 tbsp
Bay Leaf - 2
Cinnamon - 1 inch
Green Cardamom - 2 to 3
Onions - 1/2 cup (thinly sliced)
Green Chillies - 2 (Slit into halves)
Salt - Add as per taste
Garam Masala - 1/2 tsp
Lemon Juice - 2 tsp
Instructions:
Wash the rice and soak enough water for 20 minutes.
Heat the oil in the pan and once it is hot, fry the wadi until they are browned.
Drain and keep aside.
Heat the Ghee in a pan.
Add bay leaf, cinnamom, cardamom and fry for a few seconds.
Add onion and fry until goldren brown or transparent.
Drain the rice and add it in the pan along with the green chilli, salt, garam masala, lemon juice and 4 cups of water.
Add the fried wadi.
Cover the pan and cook the rice on low heat until all is absorbed and rice is cooked.
Remove the pan from heat and let the rice rest for 5 minutes.
Fluff the rice with a fork.
Serve hot with any raita of your choice.
